Wash, dry and finely chop cilantro. Cut the avocado in half, then use a knife to dice the meat while in the skin. Vigorously beat the eggs and cream until bubbles form.
Melt butter in a pan on medium/high heat. Pour in the eggs and cook for 1 minute. Add chopped cilantro and diced avocado to one side. Salt the avocado. Fold over the omelette when firm.
Turn off heat and cover with a lid. Rest for a couple minutes. Serve with a wedge of lime and hot sauce.
- Use the stems of cilantro. They are edible with lots of flavor.
- One side of the omelette usually cooks faster than the other side. Flip this side over. Put your ingredients on the less cooked side.
- The sour and spicy flavors help balance the savory ingredients.
