Keto Berry Omelette
Use blueberries, strawberries, or raspberries to make low carb omelettes
Finely chop the arugula and whisk the eggs and cream together.
Melt the butter in a pan on medium/high heat. Pour in the whisked eggs. Cook for about 1 minute with the lid on top. Add the arugula, cream cheese, and blueberries to one side. Fold the other side over when firm.
Turn off the heat and cover with a lid. Rest for a couple minutes and serve.
- Vigorously beating the eggs adds air for fluffy texture.
- Freeze berries, then let them thaw. Frozen water crystals expand to break the cell walls and expose hidden sweetness.
- One side of the omelette usually cooks faster than the other side. Flip this side over. Put the ingredients on the less cooked side.
- Use organic eggs & grass-fed dairy for best ingredients.
