Easy Keto Pizza Recipe
Use high-fiber tortillas for easy pizza crusts. They only have 5g net carbs each. This is a great recipe for a party or family. Everyone makes their own pizza, and you can split and share.
3 tbsp. Avocado Oil
1/2 cup Tomato Paste (or sour cream for a low carb white sauce)
1/2 cup Heavy Cream
My Favorite Cheeses: Mozzarella, Cheddar, Goat Cheese, Blue Cheese, Cream Cheese, Parmesan, Pecorino Romano (5-6 oz.)
My Favorite Toppings: Sausage, Bacon, Pepperoni, Mushrooms, Peppers, Artichokes, Olives, Garlic, Spinach, Anchovies, Berries, Leafy Greens, Caramelized Onions, Fresh Herbs, Spices, Olive Oil, my Basil Pesto Recipe
Preheat the oven to 450°F with a pizza stone or cookie sheet inside. Wait until the oven is nice and hot. Mix some heavy cream with tomato paste (or sour cream) until your desired consistency. More cream is more keto.
Brush or rub the tortillas with avocado oil. Toss them onto the hot pizza stone or cookie sheet. Bake until crispy light brown, 6-7 minutes. Use a fork to pop any large bubbles that begin to form on the tortillas.
Remove the baked tortillas. Add sauce, cheese, and toppings. Bake them again until golden and melty, 7-10 minutes. Drizzle some olive oil on top for extra fat. A few herbs and spices taste great!
Try this: bake the pizzas for 6-7 minutes, then turn off the oven. Open the door and let them sit in the ambient heat. They will slowly turn more golden and crispy. I usually bake a few pizzas for people, then use this method at the end.
Cooking tortillas twice makes them crispy and firm.
Always use avocado oil for high heat cooking.

Bake extra tortillas for later, then simply microwave the ingredients on top. They can also be used like pita chips for dips.
