Basic Mayo Recipe

Use this recipe as a base for more ingredients

Keto Ingredients

  • 4 Eggs (2 whole eggs & 2 egg yolks)
  • 2 cups* Avocado Oil
  • 2 tbsp. Lemon Juice
  • 1 tbsp. Dijon Mustard
  • 2 tbsp. Olive Oil
  • 3/4 tsp. Mineral Salt
  • 1/2 tsp. Black Pepper

Keto Cooking

Mix all ingredients with only 1/4 cup of oil in a food processor for 10 seconds. Slowly, pour in the rest of the oil while the food processor is spinning. Drizzle the oil in a thin stream to emulsify the ingredients

Alternatively, use an immersion blender instead of a food processor. Use the same method of slowly drizzling the oil, and use a small/deep bowl to prevent splatter. There is less cleanup with this cooking method, which is my preferred way of making mayo.

You can also whisk the mayo by hand. It will take longer longer and is a workout! Vigorously, whisk in one tablespoon of oil at a time. Whisk each tablespoon for about 30 seconds, then add some more.

Keto Cooking Tips

  • Slowly mixing in the oil emulsifies the ingredients for thick texture.
  • Refrigerate in a closed container for 1-2 weeks. If you add fresh herbs, they will only keep for about 1 week. 
  • To preserve the mayo longer, add herbs to the mayo base in small amounts as you make meals. 
  • *2 cups of avocado oil makes a thick consistency. It is possible to only use 1.5 cups. The consistency of the mayo will be more saucy.

Keto Ingredients

  • 4 Eggs (2 whole eggs & 2 egg yolks)
  • 2 cups Avocado Oil
  • 1 cup chopped Cilantro
  • 2 tbsp. Lime Juice
  • 3/4 tsp. Mineral Salt
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Ginger Powder
  • Optional: 1-2 cloves Garlic

Walnut Mayo
