Keto Pasta Recipe

My family makes this keto pasta recipe every week. It's one of our favorite recipes! The trick is to thinly cut and lightly fry the collard greens. Add this easy cream sauce or your favorite keto sauces on top. 


Vegetable Noodle Recipe

Keto Ingredients

  • 18 oz. Collard Greens (2 batches from the store)
  • 2 tbsp. Butter or Herb Butter

Keto Cooking

Wash and dry collards. Stack a few leaves and tightly roll them together. Chop very thin (1/8 inch). You can chop them at 1/4 inch. They will take a bit longer to fry.

Pan fry or stir fry in butter on high heat for 1-2 minutes. Continuously toss and stir. Cook in two batches for best results. The collards will be done when they soften and darken. You will be able to twirl them around a fork, and they will have a mild taste.

Keto Cooking Tips

  • Lightly frying collards maintains their integrity. Keep them al dente, tender and not mushy.

Keto Cream Sauce

Keto Ingredients

  • 1.5 cups Heavy Cream
  • 2 tbsp. Butter or Herb Butter
  • 1 medium Onion
  • 2 tbsp. Cooking Sherry or White Wine
  • 1 tsp. Dijon Mustard
  • 1 tbsp. Lemon juice or Balsamic Vinegar
  • Mineral Salt & Black Pepper to taste
  • Optional: Mushrooms, Parmesan, Bacon, Herbs, Toasted Seeds

Keto Cooking

Dice the onion into small pieces and cook in a large pan with butter on medium heat for about 10 minutes (until the onions are tender). Add sherry or whine and stir. The ingredients will sizzle and release flavor! Add heavy cream and reduce until thick and creamy, about 12 minutes. Add lemon juice, salt and pepper. Serve now or turn off heat and put on a lid. Garnish with optional ingredients.
