Keto Quesadilla

Make this easy keto quesadilla recipe for lunch. High fiber tortillas only have 5 net carbs! Add avocado, veggies and bacon for a full meal.

Keto Ingredients

  • 1 High Fiber Tortilla
  • 2 oz. Pepper Jack Cheese
  • 1/2 ripe Avocado
  • 1-2 tbsp. Avocado Oil
  • 2 tbsp. Sour Cream
  • Squeeze of Fresh Lime
  • Pinch of Mineral Salt
  • Optional: Bacon, Veggies, Cilantro, Spices, Salsa

Keto Cooking

Add grated cheese and diced avocado to one side of the tortilla. Fold in half. Place into a pan with avocado oil on medium heat. Close with a lid and cook until golden, about 2 minutes. Flip and cook the other side for an additional 2 minutes. Remove from heat and serve. 

I always eat quesadillas with a bit of sour cream and lime. Add bacon, veggies, cilantro and mineral salt for flavor.
