Keto Crackers Recipe
Make keto cheese crackers with mixed seeds
- 2 cups Blanched Almond Flour
- 2 cups Mozzarella Cheese
- 1 Egg
- 1/4 cup Butter
- 1 tsp. Mineral Salt
- 1/4 cup ground Mixed Seeds
Preheat the oven to 375°F. Melt the butter in the microwave. Grind seeds in a coffee grinder for a few seconds. Mix all ingredients in a large bowl and knead into a dough.
Toss a handful of almond flour onto a cutting board. Roll the dough into a 10-inch long cylindrical log. Slice crackers 1/8-inch to 1/4-inch thick.
Place sliced crackers onto a baking tray with parchment paper. Remove excess parchment paper with scissors or it will burn. Bake for about 15 minutes, then remove and flip the crackers. Bake for an additional 15 minutes, then remove and cool.
- Microwave the dough ball for 20-30 seconds. The cheese will melt and bind the ingredients to become more elastic.
- Cut the crackers with a sawing motion and clean the knife often. Rotate the dough log as you cut to keep the cylindrical shape.
