Cilantro Pesto Chicken
- 6 oz. Chicken Breast
- 1 tbsp. Butter or Cilantro Lime Butter
- 2 tbsp. Cilantro Pesto
- 1/2 Avocado
- Fresh Lime Juice
- Mineral Salt & Black Pepper
- Optional Marinade: Lemon Juice & Cilantro
Marinate chicken breast in lemon juice and cilantro overnight (optional). Pan cook chicken in butter on high until done, about 15 minutes. Cut into the meat to make sure it is cooked through. Warm cilantro pesto in the microwave and spread on top. Slice and plate avocado on the side. Garnish with fresh cilantro, hot sauce, lime, parmesan, butter, nuts, seeds, salt & pepper.
