Keto Roasted Veggies with Goat Cheese
Make this easy keto dinner recipe for your family
- 1 large log Goat Cheese
- 1 cup Black Olives
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1 Red Onion
- 12 Garlic Cloves
- 1/4 cup Avocado Oil
- 1/4 cup Olive Oil
- Mineral Salt & Black Pepper to taste
- Optional: Mushrooms, Yellow Onion, Asparagus
Wash and chop veggies. Toss in avocado oil. Roast veggies in the oven at 400°F for 30 to 40 minutes. Stir halfway through. Add the goat cheese and olives for the last 10 minutes. Drizzle olive oil on top for more fat and flavor.
- Veggies can be roasted for longer or shorter depending on your preferences.
- Use avocado oil for high heat cooking and olive oil for garnishing.
