Keto Roasted Veggies with Goat Cheese

Ingredients

  • 1 large log Goat Cheese
  • 1 cup Black Olives
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 Red Onion
  • 12 Garlic Cloves
  • 1/4 cup Avocado Oil
  • 1/4 cup Olive Oil
  • Mineral Salt Black Pepper to taste
  • Optional: Mushrooms, Yellow Onion, Asparagus

Cooking

Wash and chop veggies. Toss in avocado oil. Roast veggies in the oven at 400°F for 30 to 40 minutes. Stir halfway through. Add the goat cheese and olives for the last 10 minutes. Drizzle olive oil on top for more fat and flavor.
