Keto Sausage and Peppers
Use Italian sausages or brats for this easy keto dinner.
- 4 Italian Sausages or Brats
- 4 tbsp. Avocado Oil
- 1 Yellow Onion
- 1 Red Pepper
- 1 Orange Pepper
- 6-8 cloves of Garlic
- 6 handfuls of Spinach (8 oz.)
- Mineral Salt to taste
- 20 Kalamata Olives
- 6 oz. Feta Cheese
- Optional: Olive Oil, Fresh Herbs, Fennel, Red Pepper, Toasted Seeds

Sauté the sausages in a pan on medium heat until brown, 10-12 minutes. Remove the sausages and chop into bite size pieces. If boiling brats, slow simmer in a can of beer until cooked all the way through.
Wash and chop the veggies. First, sauté the onion in the pan. Add the peppers, then the garlic. Sauté all the ingredients until tender. Add the sliced sausages. Turn off the heat. Add salt and seasoning.
Chop the spinach into small, bite size pieces. Make a bed of greens on each plate. Add the sausage and peppers mix. Garnish with chopped olives, crumbled feta, and fresh herbs. I add Toasted Seeds to almost all my meals. It is loaded with nutrition!
