Strawberry Mousse Recipe
Choose your favorite low carb berry. Use strawberries, blueberries, or raspberries.
Thaw the frozen berries by leaving them on the counter for a few minutes. Finely chop into small pieces. Mix all the ingredients in a bowl with an immersion blender for about 2 minutes. The strawberry mousse will become thick and fluffy. Scoop into small bowls or cups and garnish.
- Use frozen berries for the sweetest flavor. Frozen water crystals expand and break apart cell walls to expose hidden sweetness.
- *Double the amount of berries for blueberries or raspberries. You can use up to 1/2 cup of smaller berries.
- You can make mousse with a food processor or whipping by hand.
