Quick & easy zoodles carbonara pasta recipe
Spin the zucchini in the zoodle machine to make long flat zoodles. Chop them into 5-7 inch long bite-size noodles.
For best results, squeeze out the water from the zoodles. Simply, mix a few pinches of salt throughout the zoodles. Let them rest for a couple minutes, then squeeze out the water over the sink. The salt will pull out most of the water!
Chop the bacon into small pieces and cook on medium heat in a large pan. Cook until tender or crispy depending on your preference. We prefer tender bacon with carbonara pasta.
Turn off the stove and add butter. Toss in the raw zoodles, parmesan, egg yolks, and optional ingredients. Mix well with salt and pepper to taste. Plate and garnish with more parmesan.
- Adding salt and squeezing out the water is a great trick for releasing moisture from zucchini. Don't be afraid of the salt. Most of it comes out with the water.
- Keep the zoodles raw. Trust me. If you cook them, they will become soggy and flavorless. Keep them raw and delicious.
