Keto Veggie Pasta
Zoodle pasta noodles with veggies & butter
- 3 medium Zucchini
- 1/2 cup Butter or Herb Butter
- 1 medium Yellow Onion
- 1 cup Green Beans (100g)
- 2-3 cloves Garlic
- 4-5 Green Onions
- 1 cup grated Parmesan Cheese
- 1/2 cup Toasted Pine Nuts or Toasted Nuts
- 12-15 Cherry Tomatoes
- 3 tbsp. Olive Oil
- Mineral Salt & Black Pepper to taste
- Optional: Toasted Seeds, Fresh Herbs, Lemon
Prep and process all ingredients. Crush garlic. Chop green onions. Slice onions into long/thin pieces. Wash and cut the ends off green beans. Grate parmesan cheese and slice tomatoes in half. Insert zucchini into the zoodle machine and turn the handle to make zoodles.
In a large pan or stir fry wok, fry the onion slices with a tablespoon of butter on medium/high heat. Cook for about 5 minutes until tender. Remove onions and add green beans with a tablespoon of butter. Cook for about 3-5 minutes, depending on how tender or crisp you would like them. Next, cook the zoodles with garlic and two tablespoons of butter. Cook in two batches for only 30-60 seconds! Always stir and toss.
Turn off heat and mix all the cooked ingredients in the pan. Add the rest of the butter for a simple sauce. Plate and garnish with parmesan, olive oil, toasted nuts, green onions, and tomatoes. Salt and pepper to taste. A squeeze of lemon will brighten the dish.
